I had to share this recipe because it turned out amazing! We used the Asian shredded chicken to make lettuce wraps with the coconut rice as well. We topped them with shredded carrots and avocado and a spicy mayo, which is just veganaise or you could use regular mayo mixed with siriacha sauce! Yummy and healthy! And it made tons of leftovers! We did edamame on the side! The recipes were found on Pinterest and then I put my own little twist on them!
